I've purchased new face plates for the speedo and tach on my 03.

My question is how do you get the pointers off and back on again without messing up their calibration?

You can gently pry them up with a screw driver, or pinch them up with a pair of dikes. when you put them back on you calibrate them by turning them all the way clockwise until you feel pressure and push against it till they line up with the "zero" marks once powered up. Don't put the dash face back on until you have powered it up a few times to make sure they zero. Where did you get your gauge faces??

There is a post on here with a link to a guy on ebay. If you search ebay you'll probably find him. He makes quite a few different styles and colors. It was like $20 bucks shipped for the tach and speedo face plates.
